The server is the most underutilized resource at any restaurant. They know which dishes the kitchen is executing well tonight. They know what’s coming off the menu next week. They know which table has a draft, which section is loud, which dessert is actually worth saving room for. Most diners never ask.

The one question that unlocks everything

“What would you get if you were sitting where I’m sitting?” That’s it. It’s disarming, it’s specific, and it signals that you actually want a real recommendation. Most servers are waiting for someone to ask it.

What not to do

Don’t pepper them with questions during the rush. Don’t modify every dish — if you need to change everything to make it work, pick something else. Don’t ask “what’s good?” — everything is good, that’s why it’s on the menu. Be specific about what you’re in the mood for and let them help you find it.
